Our process begins with a premium base spirit. We then distill it one final time with a carefully curated blend of botanicals, featuring locally harvested California Bay Laurel and wild fennel, alongside classic juniper berries and other complementary flavors. This commitment to California botanicals captures the essence of our region.

The defining step is maturation in French Oak barrels. This oak barrel aging works its magic: it gently tempers the more assertive botanical notes while coaxing forward beautiful layers of floral aromas and rich vanilla undertones. The result is an exceptionally smooth sipping gin, where the traditional juniper backbone is elegantly softened and complexified by the wood’s influence.
