A Legacy of Excellence

Cirsium is a single-vineyard cru, grown on a historic 1-hectare plot planted in 1953 by Damiano’s grandfather, Guido. The low-yielding vines produce just 4–6 clusters per plant, ensuring concentrated flavors and exceptional quality. Each grape is hand-harvested at peak ripeness, with meticulous sorting to eliminate imperfect berries before fermentation.

Artisanal Winemaking

The grapes undergo natural fermentation in concrete vats, followed by a 15-day maceration to extract depth and complexity. Aging takes place in large foudres for the first year, then returns to concrete vats for a second year before bottling. The wine rests an additional year in bottle, allowing it to develop a refined, elegant character.
