Terroir & Vines: Our commitment shines through vines averaging over 40 years old, rooted in distinctive clay soils rich in manganese – a mineral signature contributing subtle complexity and structure rarely found elsewhere in Fleurie. Practicing sustainable lutte raisonnée farming, every task is meticulously performed by hand. Soil disturbance is minimized to protect the delicate root systems of these mature vines, ensuring concentrated fruit expression year after year.
Artisan Winemaking: True to traditional Beaujolais methods, we employ gentle semi-carbonic maceration. Whole Gamay clusters are carefully hand-harvested and spontaneously fermented using only native yeasts within open-top concrete tanks – a process preserving vibrant fruit integrity. For approximately 14 days, the cap remains submerged during maceration (a deliberate choice over punchdowns), resulting in exceptional depth and a beautifully silky texture while retaining freshness.
