Our meticulous process begins with exceptionally long fermentations (up to 118 hours), cultivating distinctive sweet blackberry notes in the spirit even before cask maturation. This signature Isle of Raasay expression pioneers a historic cask recipe: we separately mature peated and unpeated spirit in six distinct casks – ex-Rye Whiskey, virgin Chinkapin oak, and Bordeaux red wine casks – then expertly blend them. This innovative approach creates unparalleled complexity.
