Artisanal Winemaking:
Hand-harvested grapes undergo precise destemming before fermentation in temperature-controlled stainless steel at 82°F. Through gentle pump-overs three times daily and 15 days of skin contact, we extract velvety tannins while preserving vibrant fruit notes. The wine then journeys to our historic 82-foot-deep cellars for natural malolactic fermentation in traditional tiled vats. Sheltered from light and temperature shifts, it ages undisturbed for 6–10 months—emerging harmoniously structured yet approachable young.
