Distilled in traditional copper pot stills, the spirit matures in three distinct casks: ex-bourbon barrels, French oak wine casks, and finally, our signature house-made umeshu casks. This plum liqueur—crafted from locally grown ume fruit—imparts a subtle stone fruit sweetness during the finishing process, while maple charcoal filtration ensures remarkable smoothness.
