Our grapes were meticulously hand-harvested to ensure peak quality. Embracing a natural approach, we employed a gentle 24-hour whole-cluster maceration to delicately extract nuanced tannins, vibrant aromatics, and complex flavors directly from the skins before pressing. Crucially, no sulfur was added initially, allowing the juice to undergo controlled oxidation – a technique that builds depth and complexity naturally.

Following a brief 36-hour cold settling period, the pristine juice was carefully transferred for spontaneous fermentation driven by indigenous yeasts, further enhancing its unique personality. Post-fermentation, the wine matured gracefully in tank for an extended 22 months resting on its fine lees (sur lie aging). This patient elevage imparts remarkable texture and richness without compromising freshness. True to our minimalist philosophy, the wine was neither fined nor filtered prior to bottling on August 14th, 2021; sulfur dioxide is our only addition, used minimally post-fermentation to ensure stability.

The result? A compellingly pure and textured Central Coast Riesling offering layers of flavor and aroma complexity rarely found at this price point. With only 225 cases produced, this limited-production California white wine represents an exclusive opportunity to experience meticulous natural winemaking techniques firsthand.
